During this time the American Dietetic Association required a two year Internship and Practicum at a hospital and Health care facility; acute and long term care. Some of my experience was, but not limited to, collecting formal medical assessment data, reviewing medical data statements(MDS) and correlating with other health care staff in regards to patient/ client care, taking and submitting perscription diets from nurses as stated by Physicians, auditing the food service area and staff for proper cleanliness, sanitation, out of date items, food storage; both wet and dry, and refrigerator stock.
I was also to observe the kitchen and trayline area to ensure that all safety and sanitation laws were being followed such as checking internal food temperatures according to OSHA/JCAHO standards, taking patient surveys and monitoring meal quality.
