Job Description:
Responsible for ensuring that all food being provided from Central Kitchen meets sanitation, quality and nutrition requirements as defined by Older Americans Act Regulations and FDA Hazard Analysis and Critical Control Point (“HACCP”) procedures and processes. Assists Kitchen Manager with overall operation of the Central Kitchen including safety, efficiency production, quality control and delivery of meals and supplies. Responsible for planning and coordinating nutrition and food information and education activities for both homebound and congregate meal participants as well as food service personnel in accordance with the Older Americans Act Regulations. Responsible for performing detailed Central Kitchen and off site inspections and provide written reports with corrective action required outlining recommendations that will benefit the quality of service. Planning and development of menu analysis to comply with the Dietary Guidelines for Americans, based upon the California Food Guide and Older Americans Act requirements. Development of new menu items and recipes. Responsible for Kitchen operations in absence of Kitchen Manager. Participate in the recruitment, hiring, training and supervision of staff.
